7 potatoes, grated
1 medium onion, grated
2 eggs
1/2 c flour
1/4 tsp baking powder
1 tsp salt
Vegetable oil

Directions:
Directions:
Soak grated potatoes in cold water for 1 hour. This removes starch; drain. Add grated onion and remaining ingredients. Heat approximately 1 inch of oil in frying pan, enough to cover pancakes. Drop mixture carefully into hot oil. Turn with spatula after 3-4 minutes in order to brown other side. Cook 3-4 minutes longer. Place on paper towel to drain, serve.
