1 cup vinegar
small piece alum

To every 7 lbs of cukes use 3 lbs of brown sugar

1 quart vinegar
1 Tbsp cinnamon
1 Tbsp allspice
1 Tbsp cloves
1 Tbsp celery seed

Directions:
Directions:
Soak cukes in strong salt water for 2 days. Then soak in fresh water for 2 days. Scald in weak vinegar (6 cups water & 1 cup vinegar) with alum.

Cut cukes into 1 1/2 inch chunks.

To every 7 lbs. of cukes - use 3 lbs. brown sugar.

Boil the following together for 3 minutes: brown sugar, 1 quart vinegar, cinnamon, allspice, cloves and celery seed. Pour over pickles while hot.
