Combine then set aside:
1 cup flour
⅓ cup cocoa
¼ tsp salt

Finely chop pecans to make ½ cup and set aside.

Cream:
½ cup margarine
⅔ cup white sugar

Beat until light and fluffy then mix in:
1 egg yolk (save the white)
2 tbsp milk
1 tsp vanilla

Directions:
Directions:
Stir in flour mixture. Chill dough for one hour. Whisk egg white until frothy. Roll dough into balls then dip in the egg white and roll and press in the chopped pecans. With a small measuring spoon, make an indentation in the centre of the ball. Bake at 350ºF for about 8-10 minutes, or until set. As the cookies come out of the oven, gently re-press the indentation. Let cool a bit then fill indentation with caramel and drizzle with chocolate.

Caramel: In a glass bowl melt ½ cup butter (not margarine). Add 1 can sweetened condensed milk and 3 tbsp white corn syrup. Cook in microwave 6-8 minutes, stirring every minute. Stir in 1 tsp. vanilla. Cool and use. A good caramel filling for chocolates as well.
