1 large egg
1 c. all-purpose flour
2 tbsp. vegetable oil
1 tsp. baking powder
1/2 tsp. salt
3/4 c. milk (add more if needed)

Directions:
1. Beat egg, milk, and cooking oil in a medium bowl.

2. Add dry ingredients - flour, sugar, baking powder, and salt - flour, sugar, baking powder and salt to wet ingredients.

3. Heat the griddle or pan over medium heat. Grease griddle or skillet with margarine or cooking oil. For each pancake, pour less than 1/4 cup batter from a cup or pitcher onto hot gridle.

4. Cook pancake until puffed and dry around edges.

5. Turn and cook other side until golden brown

When mixing the batter leave a few lumps in the mixture. It helps make the pancakes more fluffy.
