3/4 cup (1 1/2 sticks) butter, softened

1 cup brown sugar, packed

1 large egg

1/2 cup molasses

2 1/4 cups all-purpose flour

2 teaspoons baking soda

1 teaspoon ground cinnamon

1 heaping teaspoon ground ginger

1/2 teaspoon ground cloves

1/2 teaspoon salt

1/4 cup granulated sugar (for rolling)

Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper.

In a large mixing bowl, beat together the butter and brown sugar until light and fluffy.

Add the egg and molasses, and mix until well combined.

In a separate bowl, whisk together the flour, baking soda, cinnamon, ginger, cloves, and salt.

Gradually add the dry ingredients to the wet ingredients, mixing until just combined.

Scoop out 1-inch dough balls and roll them in the granulated sugar.

Place them 2 inches apart on the prepared baking sheet.

Bake for 8-10 minutes, or until the edges are set but the centers still look slightly soft.

Let cool on the pan for a few minutes, then transfer to a wire rack to cool completely.

Tips:

For extra chewy cookies, slightly underbake them and let them finish setting on the baking sheet.

If you like a stronger spice flavor, increase the ginger or cloves slightly.

Store in an airtight container to keep them soft for days!
