Ingredients: 5 lbs bag of potatoes 6 eggs, hard boiled and sliced 1 cup celery, chopped 1 large onion, finely chopped 1/2 cup sweet pickle relish 8 slices of bacon, cooked until crispy and crumbled; reserve the bacon grease 1 1/2 cups mayonaise 1/2 cup apple cider vinegar Salt and pepper to taste

Directions:Wash the potatoes thoroughly and cook, whole and unpealed, in salted boiling water. Test the doneness of the potatoes with a fork occasionally. The pototoes are done when they are somewhat soft, but not completely cooked through. (You don't want to over cook the potatoes, becuase if they are too soft, the salad will have the consistency of mashed potatoes. Keeping the potatoes a little on the underdone side will result in the salad having a little more texture). Once potatoes are cooked, remove from the heat, drain, and rinse with cold water; set aside to cool.
Meanwhile, cook the bacon in a skillet and hard boil the eggs; chop the vegetables and set aside. In a medium bowl, mix the mayo and vinegar with salt and pepper to taste; set aside.
Once the potatoes are cooled enough to handle, peel the skins from them, and roughly chop them into a large bowl. Add the chopped vegetables, eggs, crumbled bacon and relish; mix well. Add the reserved bacon grease and the mayo/vinegar dressing; mix thoroughly. Once everything is mixed well, sample the salad. If the mixture is too dry, add additional mayo and/or vinegar until the salad has the consistency you want. Additional salt and pepper can also be added until the salad has "the taste". I can't really explain what "the taste" is, but you will know it when it is right! Serve immediately, or refrigerate to serve later. |

Notes: This potato salad is my Mother's creation, and it is hands down the best I've ever tasted (most people who've tried it agree). In our family, a cookout or family gathering is incomplete without this side dish. The bacon adds a nice depth of flavor, and the vinegar provides a little acidity. Once again, this recipe comes from my Mother, and she never used exact measurements for the ingredients, so the amounts given above are estimates. It may take a little experimentation to achieve the results you want, but be patient! It's SO worth it!
