4 Idaho baking potatoes cut into slices
Canola oil for frying, about 1/4 cup
1 small onion chopped
1/4 cup grated parm cheese
6 eggs
Salt and pepper

Directions:
Directions:
Heat oil and fry onions. Remove cooked onions and add the potatoes to pan. Fry the potatoes till golden.
Add the potatoes to the onions. Drain excess oil leaving a little in the pan. Add the potatoes and onions back to the pan and add salt and pepper. Scramble the eggs. Add cheese to eggs with a little salt and pepper. Add egg mixture to the potatoes and onions and cook on low for about 4 minutes. Put the pan under the broiler and cook till the top gets golden. Let it sit for a couple of minutes and then invert the omelet into a flat platter and cut into wedges.
