For Filling:
¼ lb dates - (1 package chopped)
2 lb figs
½ lb raisins (½ - 1 box)
½ lb nuts (½ walnuts and ½ pecans)
½ tsp cloves
½ tsp nutmeg
½ tsp cinnamon
1 container citris fruit (found in produce sections)
1 bottle of rum flavored mincemeat
1 small bottle of honey
1 small jar orange marmalade or grape jelly

For Dough:
6 eggs
2 c shortening - melted and cooled
2¼ c sugar
10 c flour (add more flour if dough is too sticky)
6 tsp baking powder
½ tsp salt
1 tsp vanilla extract
½ c milk scalded (boil until foamy)

For Filling:
Soak dates and figs, snip off hard core of figs and grind, dates, figs, raisins and nuts. Add rest of ingredients and set to flavor for a day or so.

For Dough:
Mix all together and chill for a short time. Take a chunk of dough and roll out on floured surface. Roll and cut a piece and dough lengthwise. Put filling in the middle of this dough and then lay one side of dough over the other. (Doesn't take a lot of filling but enough). I know that makes no sense but hands on learning will help. Cut in 1-inch pieces and place on parchment paper on cookie sheet and bake at 350º for 15-20 minutes.

For Frosting: Beat 3 egg whites, add 1 box of confectionary sugar and 1 tsp lemon extract. Once cookies are cooled, dip cookie top in frosting and sprinkle with colored candies.

This dough also is a lot but I'd use what isn't needed for jam cookies. The filling, make sure you grind all ingredients. This filling recipe makes a lot and can be divided and frozen for the following year in an airtight and freezer safe container. If the dough is flaky, put in food processor and add milk so dough is soft. Also spread filling thin.
