Chocolate Mint Cookies Recipe

¾c butter
1½c firmly packed brown sugar
2T water
2c (12oz) semi sweet chocolate chips
2 eggs
2½c flour
1¼ tsp baking soda
½ tsp salt
1lb solid chocolate mint disc (usually use the pastel ones that look like a kiss with parallels on the bottom)

Over low heat, cook butter, sugar and water until butter is melted. Add Chocolate chips, stirring until partially melted. Remove from heat and stir until Chocolate is completely melted. Pour into large bowl and let stand for 10 minutes to cool slightly. Mix at high speed and beat eggs in one at a time. Reduce speed to low; add dry ingredients; beat until blended. Chill dough 10 minutes for easier handling.

Preheat oven to 350º and line cookie sheets with foil. Roll teaspoon of dough into balls, place 2" apart. Bake 12-13 minutes-NO LONGER (cookies crisp as they cool) Remove from oven and place a mint on each flat cookie. Allow to soften and then swirl over center of cookie. Remove from sheets and cool completely.
