1 ¾ c. AP flour (249g)
¾ t. salt
½ t. baking soda
12 T. unsalted butter softened (170 g)
1 c. granulated sugar (200g)
½ c. brown sugar (100g)
1 large egg
2 T. toasted sesame oil
1 T. water
1 ½ t. vanilla extract
3 oz. bittersweet chocolate, chopped (85g) (optional)
black & white sesame seeds for rolling

1. Preheat oven to 350º
2. In a small bowl, combine flour, salt and baking soda
3. In a stand mixer with paddle, beat butter until creamy
4. Add granulated sugar and brown sugar and beat on medium until light and fluffy.
5. Add the egg, toasted sesame oil, water & vanilla. Mix on low to combine
6. Add the flour mixture and mix on low until combined
7. Add the chopped chocolate if using.
8. Form the dough into balls and roll in the sesame seeds.
Place on a parchment lined baking sheet
9. Bake until the dough balls have spread flat but are puffed slightly in the center. About 9 mintues
10. Lift one side of the tray and let it drop down onto the oven rack. Repeat every 2 minutes a total of 3 times. This will cause the cookie to have ridges.
11. Total baking time should be 15 to 16 minutes
12. Let cookies cool on the pan for 10 minutes
13. Remove to rack to cool completely
