Filling:
1 can apricot filling
2 pk. lemon jello
1 can pineapple
¼ c. cold water
1½ c. hot water
1 c. sugar

Dressing:
1 sm. pk. cream cheese, 3 oz.
½ t. vanilla
¼ t. almond extract
½ c. whipping cream, whipped
1 t. sherry
2 Tbsp. sugar

Directions:
Directions:
Mix filling, cold water & sugar well. Dissolve lemon jello in hot water add apricot mixture & mix well. Add pineapple & juice. Set in 9x12" pan.

Dressing: Cream cheese with sugar, vanilla, almond extract & sherry. Mix whipped cream with cheese mixture and spread on salad.

I remember my mom making this, usually for a family dinner or special occasion such as Easter. This is one of my favorites which is why I stole my mom's recipe. Aunt Candy will usually bring it to family dinners.
