⅓ cup shortening
⅓ cup sugar
⅓ cup honey
⅓ cup molasses
1 egg
1 tsp salt
1½ tsp soda
½ tsp cinnamon
¼ tsp cloves
¼ tsp ginger
¼ tsp nutmeg
3 cups flour

1. In a large mixing bowl, cream together the shortening and sugar until light and fluffy.
2. Add the honey, molasses, and egg, mixing well until combined.
3. In a separate bowl, sift together the salt, baking soda, cinnamon, cloves, ginger, nutmeg, and flour.
4. Gradually add the dry ingredients to the wet ingredients, mixing until a smooth dough forms.
5. Cover the dough with plastic wrap and refrigerate for at least 1 hour to make it easier to handle.
6. Preheat the oven to 375°F and lightly grease or line baking sheets with parchment paper.
7. Roll out the chilled dough on a lightly floured surface to about 1/4-inch thickness.
8. Use cookie cutters to cut the dough into desired shapes (e.g., gingerbread boys or other festive shapes).
9. Place the cookies on the prepared baking sheets, leaving about 1 inch of space between each cookie.
10. Bake in the preheated oven for 8–10 minutes, or until the edges are just set but not browned.
11. Remove from the oven and let the cookies cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
12. Decorate the cooled cookies as desired with icing, candies, or other decorations.
