3 cups of yellow corn meal
1 can of cream-style corn
1 tsp sugar
2 tsp salt
1 cup of chopped onion
1/4 cup of chopped jalapeño
1 and 1/3 cups of grated cheese* (can be shredded bag or freshly grated)
1 and 1/2 tsp baking powder
1 and 3/4 cups of milk
1 cup of vegetable oil
3 eggs


*Cheddar, Mexican blend, or other cheese of choice is fine

Preheat the oven to 425º F. Mix all the ingredients until fully combined, and pour them into a well-greased baking dish. Bake for 25 to 30 minutes until golden brown, and test by inserting a toothpick or knife into the center (ensuring it is removed "cleanly").
