8 Ounces bittersweet chocolate, finely chopped

1/4 cup unsalted butter, cubed

2 large eggs, room temperature

3/4 cup granulated sugar

1/2 cup all purpose flour

1/2 cup firmly packed dark brown sugar

1/4 cup cocoa powder

1 tsp baking powder

1/4 tsp kosher salt

1 Tbls vanilla extract

garnish: flaked sea salt

1. Preheat oven to 350. Line 2 baking sheets with parchment paper.

2. In top of a double boiler, combine chocolate and butter. Cook over simmering water stirring occasionally. until melted and smooth. Remove from heat, and let cool slightly, about 5 minutes.

3. In mixer, beat eggs and granulated sugar until pale but still fluid, 3-5 minutes.

4. In a medium bowl, sift flour, brown sugar, cocoa, baking powder, and kosher salt. Using spatula, fold flour mixture into egg mixture just until combined. Add chocolate mixture and vanilla, and fold until combined. Using a 3 Tbls spring loaded scoop, scoop dough, and place 2 inches apart on prepared pans.

5. Bake until tops are dry and crackly, 10-12 minutes. Garnish with sea salt.
Let cool.
