1/2 cup butter, softened
2/3 cup white sugar
1 egg, separated
2 Tbs milk
1 tsp pure vanilla extract
1/3 cup powdered baking cocoa
1/4 tsp salt
1 cup walnuts, finely chopped

Filling:
1/2 cup confectioner's sugar
1 Tbs butter, softened
1/4 tsp pure vanilla extract
26 milk chocolate kisses, unwrapped

Preheat oven to 350º

In a mixing bowl, beat butter, sugar, egg yolk, milk and vanilla until light and fluffy. In a separate bowl combine flour, cocoa and salt; gradually add to creamed mixture. Cover and chill for 1 hour or until firm enough to roll into balls. Meanwhile, lightly beat egg white. Shape dough into 1" balls; dip in the egg white and roll in the walnuts. Place on a baking sheet and make a small indentation inthe center of each cookie with your thumb. Bake 10-12 minutes (until center is set).

While the cookies bake, combine the first 4 filling ingredients in a small bowl and mix until smooth. Immediately when cookies come out of the oven, spoon 1/4 tsp of frosting onto each cookie and gently press a chocolate kiss on top. Carefully transfer cookies onto a wire rack to cool. Note: the chocolate kisses on top of the cookies will become very soft and melty, so it is important to let them completely set before storing or serving.

These cookies are very rich, and they are a favorite of any chocolate fan! I often make a batch or two of these for Christmas, and they are always a big hit.
