4 gal tomato sauce (9 large cans)
1 lb pork neck bones
2 pt tomato paste (15 oz cans)
2 lb pork neck bones
2 Tbsp sweet basil
2 tsp salt
1 tsp black pepper
2 cloves garlic, crushed
½ tsp red pepper

Directions:
Directions:
1. Brown the pork neck bones with a little oil in a pan.
2. Add the tomato sauce, tomato paste, and spices. Stir to combine.
3. Simmer for 1 hour, stirring occasionally. Be careful not to burn.
4. Remove the pork and continue simmering the sauce for another hour. If you like your sauce sweeter, add a pinch or two of sugar.
5. For lasagna sauce, add 1 tablespoon of oregano.

Notes:
The pork is for flavor and not meant to be left in the sauce too long, as it can make the sauce bitter. Adjust seasonings to taste.
