7 large eggs
4C shredded smoked mozzarella (unsmoked mozz will be fine)
32 oz ricotta cheese
3 T Italian seasoning
6 oz each of pepperoni and1 or ham (add what you like )
Salt and pepper to taste

Directions:
Directions:
Gently beat six of the large eggs in large bowl until just mixed ,do not over work the eggs.
Combine ricotta cheese and the remaining egg in a separate bowl folding together until thoroughly mixed. Add the shredded mozz and parm to the egg mixture. Stir egg and cheese mixture together until smooth. (Or not smooth. Your choice). Combine egg and cheese mixture to the larger bowl with the 6 separate eggs and finally add your choice of either pepperoni and/or ham
Prep a 9"x 9" baking pan with a good amount oil or butter. Pour the mixture in to the prepared baking dish.
Bake at 350º for 10-15 minutes. A toothpick inserted in the middle of the frittata
Should come out clean. And enjoy before the egg hunting begins.;'[[[[

I remember eating this every Easter at your Great Grandma Chicky's house. We were not aloud to find the eggs until everyone was done. Happy Easter we hope that you can build your own families memories with this dish of my childhood.
