Ingredients: 2 cans cream style corn 12 saltine crackers (put in baggie and crush finely) 2 Tablespoons margarine Sprinkle top with Paprika

Directions:Mix corn, crackers & margarine in a baking dish. Sprinkle with Paprika. Bake in 325 degree oven for 35 minutes. Serves 6. Easy to double the recipe. This is always a good dish to serve when Dave Beier comes to visit.
Carmel Sweet Potato Casserole Nana % cup evaporated milk 1 egg 3 cups mashed cooked sweet potatoes 3-tablespoon butter 1 8 oz pk diced dates or whole dates cut up Topping: % cup maple syrup % cup butter Add milk & egg to mashed sweet potatoes. Beat until smooth. Melt three tablespoons butter in a frying pan. Add dates & sauté for 2 minutes, stirring constantly. Add sweet potatoes mixture & blend until dates are dispersed. Place in large casserole dish. To prepare topping, heat maple syrup & % cup butter until butter is melted. Pour over top of casserole. Bake at 400 degrees for approximately 40 minutes. Serve topped with a dollop of sour cream with pitted dates. Sweet Potato Casserole Aunt Melba 3 cups mashed sweet potatoes cup sugar % tsp salt 1/3 stick margarine eggs 1 tsp vanilla % cup milk Mix (Beat with Beater) Pour into greased casserole dish. Bake 400 degrees for 20-30 minutes until firm TOPPING: 1/3 CUP LIGHT BROWN SUGAR 1 CUP CHOPPED PECANS 1/3 CUP FLOUR 1/3 STICK MARGARINE Mix until crumbles, sprinkle over casserole Bake 10 minut4es at 400 degrees. Sprinkle marshmallows on top & put in oven until marshmallows are brown. MAIN DISH |

Notes: NOTE FROM AUNT GINGER: This recipe is Uncle Dave's favorite. Grandma Theda would not give the recipe to me. Over the years, I finally figured it out. I think the reason she would not give it to me was because it was too easy. It's a great dish — try it!
NOTE FROM GRAN: When I was reading all the handwritten recipes in Nana's, Aunt Ginger and my recipe boxes, I ran across this one from Adam (he had been his Mom's spy and watched his Grandma make the famous Scalloped Corn.) This recipe was handwritten by Adam — too cute:
5-18-99: Pam, Corn, spread cracker crumbs, 5 butter scoops spread out. Mix well. Make sure butter is gone. Even out. Spread paprika all around a lot. 45 minutes (325 — 15 minutes; 350 — 30 minutes. When it starts bubbling and crust turns brown, it's done! YOU GOTTA LOVE HIM!!!
