1 cup unsalted butter, softened
1/2 cup powdered sugar
2 teaspoons vanilla extract
2 cups all-purpose flour
1/4 teaspoon salt
1/4 cup granulated sugar (for coating)

Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper.
In a large mixing bowl, cream the softened butter and powdered sugar together until light and fluffy. This should take about 2-3 minutes.
Add the vanilla extract and mix until combined. Gradually add the flour and salt, mixing until a dough forms.
Take small portions of dough and roll them into 1-inch balls. Place the balls on the prepared baking sheet, spacing them about 1 inch apart.
Flatten each dough ball gently with the back of a fork or your fingers. Sprinkle a little granulated sugar on top of each cookie.
Bake for 12-15 minutes, or until the edges of the cookies are lightly golden.
Remove from the oven and let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
Enjoy these light, buttery cookies with a cup of tea or as a sweet snack.
