1 cup flour
¾ cup rolled oats
¾ cup brown sugar
1 tsp cinnamon
½ cup melted butter
4 cups chopped rhubarb

Topping:

¾ cup sugar
2 Tbsp cornstarch
1 cup water
1 tsp vanilla

Directions:
Directions:
Preheat oven to 350F. Grease a 9x9" pan.

Combine oats, flour, brown sugar, cinnamon and butter. Press half into the prepared pan. Cover with rhubarb.

Topping:

Combine sugar and cornstarch in a saucepan, add water. Cook until thick. Stir in vanilla. Pour over the rhubarb and top with the remaining crumbs.

Bake for 50-60 minutes.
