1 to 2 pounds of hamburger
1 onion chopped
2 or three stalks of celery (optional) chopped small
1 green pepper chopped small
2 or 3 cloves of garlic chopped
2 or 3 cans of diced tomatoes 16 oz.
2 or 3 cans of pinto beans 16 oz. ( or red beans )

Generally, this is how I started my Chili'
Chili usually followed having ham and then saving the ham bone and scraps of ham and adding the ham to a package of 1 to 2 lbs of pinto beans. After soaking those beans over night i rinsed them and put in a big pot and added the ham salt and pepper and cooked for 3 to 4 hrs on low. I served this with chopped onions and chopped pickles with corn bread. Yummy. The left over pinto bean I used for Chili in stead of the canned beans
For the Chili I browned the hamburger and add the onions peppers and celery to the browned meat. After browned I added the tomatoes, and beans ( either canned or leftovers from the " ham and beans". Add water to the pot to to the right consistency you want. To this add salt and pepper to taste and 2 or 3 tablepoons of Chili powder
Bring to boil and turn down to simmer for at least an hour.
