2 cups packed brown sugar
1 cup lard or shortening
½ cup buttermilk
1 tsp vanilla
4 cups quick-cooking oats
1¾ cups all-purpose or whole wheat flour
1 tsp baking soda
¾ tsp salt

1. Preheat oven to 375°F.
2. Mix brown sugar, lard, buttermilk, and vanilla.
3. Stir in remaining ingredients.
4. Shape dough into 1-inch balls.
5. Place about 3 inches apart on an ungreased cookie sheet.
6. Flatten each ball of dough with the bottom of a glass dipped in water.
7. Bake until golden brown, 8 to 10 minutes.
8. Immediately remove from cookie sheet to cool.
