1 onion
1 green bell pepper
2 stalks celery
3 cloves garlic
½ tsp cayenne pepper
1tbsp thyme
½ tsp paprika
2 bay leaves
black pepper

4-6 chicken thighs
1 cup down home sausage cubed
1 cup shrimp
3 cups chicken broth
3 cups vegetable broth

Preheat oven to 425º.Put flour in oven safe pan and bake for 45-55 min. This browns the flour four the roux. Finley chop onion, celery, bell pepper and garlic. In a Dutch oven put enough vegetable oil to brown vegetables, brown for about 5 min then add garlic and brown for a minute more. Add seasonings and at least 2 cups chicken broth to vegetables. Place chicken thighs in mixture and cover. Cook for about 30 min or until done. Remove from pan and allow to cool. Add remaining broths. Shred chicken and add. Cube up down home sausage and add. Add shrimp. Allow to simmer. Serve over rice.
