Chocolate Cherry Cookies Recipe

1½ cups all purpose flour
½ cup unsweetened cocoa powder
½ cup butter, softened
1 cup sugar
¼ tsp. baking soda
¼ tsp baking powder
¼ tsp. salt
1 egg
1½ tsp. vanilla
48 maraschino cherries (about 1 10 oz. jar) undrained
1 cup semisweet chocolate pieces
½ cup sweetened condensed milk

1. Preheat oven to 350º. In a bowl combine flour and cocoa powder, set aside. In a large mixing bowl, beat butter with electric mixer on medium/high speed for 30 seconds. Beat in sugar, baking soda, baking powder, and ¼ tsp. salt. Beat in egg and vanilla. Gradually beat in flour mixture.
2. Shape dough into 1 inch balls. Place balls about 2 inches apart on an ungreased cookie sheet. Press down center of each ball with thumb.
3. Drain cherries, reserving juice. Halve any large cherries. Place a small cherry or cherry half in the center of each cookie.
4. Make frosting: in a small sauce pan combine chocolate pieces and the sweetened condensed milk: heat until chocolate melts. Stir in 4 tsps. of the reserved cherry juice.
5. Spoon about 1 tsp. of the frosting over each cherry, spreading to cover cherry. (if necessary, thin frosting with additional cherry juice).
6. Bake in preheated oven for approx. 10 minutes or until edges are firm. Cool on cookie sheet for 1 minute. Transfer to wire racks to cool completely

Daddy took a liking to these cookies and made them a few Christmases. They are a bit labor intensive. I have also made them with Bourbon soaked cherries, which are sometimes hard to find.
