Ingredients:  
1 1/2 c almond flour
1/2 c shredded coconut
1 T grass-fed gelatin
1/2 tsp baking soda
1/4 tsp salt

1/2 c soft butter
1/2 c Lakanto brown sugar
1/4 c Lakanto granulated sugar

1 egg, room temperature
1/2 tsp vanilla

1/2 c macadamia nuts
1/2 c Lilys white chocolate chips, plus more for top

Directions:
Directions:
Mix flour, coconut, gelatin, baking soda and salt together.
Beat together butter and sugars. Mix in egg and vanilla.
Add dry ingredients.
Mix in macadamia nuts and chips, or just top with a nut.

Using small scoop, put on parchment paper, press down to 1/2" thick.
Top with more chocolate chips if desired.
Bake at 350 for 5 minutes, turn cookie sheet and bake 4 more minutes.
Cool 20 minutes before removing to rack (they'll crumble if you don't let them set.)
