3 cups all-purpose flour
¾ tsp salt
1½ cups granulated sugar
¾ tsp baking powder
¾ cup shortening
¾ cup butter, softened
⅔ cup orange juice
9 large eggs
1 cup red candied cherries
1 cup green candied cherries
1 cup candied pineapple
1 cup diced dates
1 cup golden raisins
1 cup pecans, chopped
1 cup apricots cut in half
1 cup apples diced

Pre-heat oven 325º F
Line an angel food cake pan with foil extend well over the sides of the pan
(bundt pan or 2 bread loaf pans)
So, you can lift the fruit cake from the pan after fruit cake has cooled
Stir together flour, baking powder and salt
In a large mixing bowl, beat butter and shortening with an electric mixer for 30 seconds
Add sugar and beat until fluffy.
Add eggs one at a time beating 1 minute after each egg
Stir in orange juice just until mixed
Fold in all fruits and nuts
Mix well, pour into well greased foil lined baking pan(s)
Fill ⅔ full
Bake 2 hours up to 3 hours until wooden tooth pick comes out clean

Make 4 weeks before Christmas

May use 2 bread loaf pans or bundt pan or angel food cake pan
Grease generously and thoroughly sides and bottom. Set aside

For a richer flavor, soak cheese cloth, large enough to wrap the fruit cake 3 to 4 tines
If desired: May use rum, brandy or whiskey
Remove cheese cloth once a week to resoak cake with rum or brandy or whisky

Note: If desired use ½ cup orange juice instead of the rum or brandy or whisky
