Directions:1. In a large mixing bowl, combine the flour, salt, and sugar. Create a well in the center and pour in the yeast mixture. Allow it to rise.
2. Meanwhile, mix together the mashed potatoes and beaten eggs. Gradually incorporate this mixture into the flour, adding scalded milk as needed, until a dough forms. Knead the dough until it becomes smooth.
3. Transfer the dough into a greased bowl, cover it, and let it rise until it doubles in size. Punch down the dough and let it rise again until it doubles in size once more.
4. Once risen, knead the dough and roll it out to a thickness of about 1/4 to 1/2 inch. Use a round glass or roll cutter to cut out rolls.
5. Melt 1 cube of butter in a sheet pan you are baking the rolls in. Take each cut-out roll, dip it in the butter, stretch it slightly, fold it over, and place it on a sheet pan next to each other.
6. Cover the pan and let the rolls rise again until they double in size. Can also section into scones let rise and fry and serve with syrup, jam or powdered sugar.
7. Preheat your oven to 400°F (200°C). Bake the rolls for 12-16 minutes or until they are golden brown. |

Notes: These rolls are truly fantastic! I have cherished memories of when my Grandma made them, and they've always been a hit with you kids when I baked them. Whether served as scones, paired with chili, or enjoyed with hot cocoa the next morning, they never disappoint. They're especially delightful when warm and spread with honey or jam. Making and eating these rolls has created some of the best memories!
