2 C flour, sifted
2 tbsp instant coffee
½ tsp salt
1 C brown sugar
1 egg, lightly beaten
¾ C butter, melted

Directions:
Preheat oven to 350F
Combine flour, coffee, salt and sugar in bowl. Add egg and butter to flour mixture and mix well. On a lightly floured surface, press dough to quarter inch thickness and cut in to desired shape.
Place on greased cookie sheet and bake for 20-25 minutes

I like to add more of the coffee granules for added flavor. I have also used powdered coffee, such as General Foods International coffee (Suisse Mocha).
