5lbs - russet potatoes
8oz - cream cheese softened
16oz - sour cream
1/4cup - butter softened
8oz - heavy whipping cream
16oz - Shredded cheese(cheddar)
1Tbsp - granulated garlic
1tsp - salt

Directions:
Directions:
Wash and Peel potatoes. Small chop potatoes. Put in stock pot then cover with cold water. Bring potatoes to a boil for about 10 minutes or until potatoes are tender. Remove from heat then Strain potatoes in a colander then add to a sheet tray. Preheat oven to 350° put potatoes in oven for 5 to 10 minutes to dry out. When no more steam is rising, Remove potatoes. Add potatoes to a mixing bowl. Rehydrate potatoes with heavy cream, add softened butter and cream cheese, and sour cream. Mix on low with a hand/stand mixer till blended. Add salt and garlic then continue mixing now on high till combined and smooth. Put potatoes in a 9x13 casserole dish then add Shredded cheese. Cover with aluminum foil. Back at 350° for 30 minutes. Remove foil and broil till cheese has slightly browned. Remove and let sit for 2 minutes before serving
