½ cup butter, softened
1 cup sugar
2 eggs
½ tsp. salt
1 tsp. baking soda
½ tsp. baking powder
2 cups flour
1 lemon - juice plus grated rind
1 cup raisins

Directions:
Directions:
Using mixer, cream butter and sugar until fluffy.
Add eggs, one at a time, mixing well after each addition.
Add combined dry ingredients.
Stir in lemon juice, grated rind, and raisins.
Chill dough in refrigerator for several hours.
Drop by teaspoons onto greased cookie sheet.
Flatten with glass jar.
Bake at 350º for 7 to 9 minutes or until just edges start to brown.
Allow to cool on cookie sheet for a few minutes before removing.

A damp linen tea towel covering glass jar is perfect for flattening cookies.
Move cloth to fresh spot as dough starts to cling to towel.
