3 Eye of round roast beefs- 3-5 lbs. each
seasoning salt
garlic salt

1-2 pkg. Au Jus gravy mix

Sub buns & breads
Shredded mozzarella cheese

1. Sprinkle the seasoning salt and the garlic salt on all sides of the roasts.

2. Put roasts in a covered roaster pan not touching if possible, Cover and cook in a
225* oven for 8-10 hours depending on the sizes of the roasts. You can usually
smell the roasts when they are close to being done. Use a fork to test the tender-
ness. When done remove to a piece of foil (one fir each roast) to cool. When cool
put in refrigerator to be sliced the next day. Reserve the juices from the roasts and
keep in frig. to be used to make the au jus.

3. Slice roasts with meat slicer or electric knife as thinly as possible. Make a pkg. of
the Au Jus gravy mix as directed and add reserved juices from roasts.

4. Serve roast beasts and au jus with sub buns and mozzarella cheese.

I learned about this technique from one of Lynne's best friend's mothers many years
ago and have been using it to cook our Christmas Roast Beasts every year since.
The awesome flavor comes from the slow cooking in a low oven and cooking the
roasts in my Grandpa Leist's oval roaster which is now embedded with the flavor of
all those Christmas roast beasts cooked in it over many years. I am able to cook
3-4 roasts at a time depending on their sizes.

That roaster pan might be the best thing I have to leave to my family.
