1/2 Cup Margarine, melted
1 Egg
3/4 Cup Light Brown Sugar, packed
1/4 Cup White Sugar
2 Tsps Vanilla Extract
1 2/3 Cups Flour
2 Tsp Cornstarch
1 Tsp Baking Soda
1/2 Tsp Salt
1 Cup Chocolate chips (or I like to do 1/2 M&M's as well)

Directions:

In a large bowl add wet ingredients. Add rest of ingredients except chips. Stir to combine. Add in chips and stir.
Using a large cookie scoop or 1/4cup measure, form approx 11 equal sized balls, flatten about halfway. Place on cookie sheet or tray and cover with plastic wrap. Refridgerate at least 4 hours up to 5 days. Do not bake with unchilled cookies or they will be flat.
To cook, preheat oven to 350º F. Place on parchment lined cookie sheet and bake for 12-14 minutes or until the edges are set. Do not over bake. Remove and let cool on baking sheet for about 10 minutes. (they will cook and set some more as they rest)

Unbaked cookies can be kept in an air tight container in the freezer for up to 4 months. Take out as many as you want and bake from frozen adding 1-2 minutes baking time if necessary.
