Graham Cracker Crust:
2 cups (240 grams) graham cracker crumbs about 16 full graham cracker sheets
⅓ cup (67 grams) granulated sugar
7 tablespoons (98 grams) butter melted

Cheesecake Filling:
1 cup Powder Sugar
8 oz. cream cheese, softened
1 cup whipped cream
1 tsp. vanilla

Cherry Pie filling, about 2 cans, enough to cover cheesecake.

1. For the crust: Mix the graham cracker crumbs and sugar in a bowl, add the melted butter and stir until well combined. Transfer mixture into an ungreased 9x13 baking pan, and press it evenly along the bottom and up the sides. You can use a measuring cup or glass to even it out. pre-bake the crust for about 10 minutes at 350°F. Cool completely.

2. Make Cheesecake Filling: Mix together powdered sugar and cream cheese with hand mixer. Whip cream and fold into cream cheese and powdered sugar mixture along with the vanilla until combined. Spread evenly over cooled crust.

3. Top with Cherry pie filling (or any other flavor you might like). Chill until ready to serve.

When I was a kid, I always asked mom to make this for my Birthday instead of a regular cake. While this might not be a culinary masterpiece. It reminds me of mom and her being in the kitchen selfishly cooking for us and especially for dad. Mom always made her cherry pie filling from scratch using bottled pie cherries. No worries though if you use a can of prepared cherry pie filling. It is still delicious!
