4 oz bittersweet chocolate, broken into pieces
1 tbsp butter
¼ tsp salt
1 large egg
1/3 cup granulated sugar
½ tsp vanilla extract
¼ cup all-purpose flour
1/3 cup chocolate hazelnut spread
¼ cup roasted and skinned hazelnuts, chopped

Melt chocolate and butter in bowl set over saucepan of simmering water, stirring until smooth. Stir-in salt and remove from heat. Whisk egg and sugar in large bowl by hand or using an electric mixer until pale yellow and foamy (3-5 minutes). Whisk in vanilla, then add chocolate mixture, stirring gently with spatula until all streaks are shades of brown. Add flour, stirring gently until no traces of flour remain. Drop mixture by rounded spoonfuls onto parchment paper lined cookie sheet—2” apart. Flatten tops and refrigerate until firm (15 min to overnight). Place dollop of chocolate-hazelnut spread on each cookie before sprinkling with chopped hazelnuts. Bake at 375º for 8-10 minutes until dough looks crackled and just dry.
