4-5 lb roast (sirloin is my favorite)
1 package lipton onion soup mix
2 c beef broth
Oil olive

Directions:

Preheat oven to 250º

Heat olive oil in a dutch oven over med high heat. Salt and pepper the roast and sear on all sides until brown

Open package of lipton onion soup mix and pour over roast, then pour over beef broth

Place lid on dutch oven and cook for 2.5 hours. Remove the roast from the pan and tent with foil to keep warm

To make gravy, put dutch oven on the stove and turn heat to medium. Once it is simmering add flour/water paste to drippings from the roast, whisking constantly, to prevent from lumping. Add more water as needed to thin out, then turn to low to simmer while carving the roast. Serve with rice
