Cucumbers, preferably English or seedless
Kosher salt to taste
Ice water
White vinegar

Directions:
Directions:
Prepare a bowl with ice cubes, covered with salt and cover with water. It should taste rather salty, like ocean water. If necessary, add more salt.

Wash cucumbers and peel - either removing all peel or leaving thin strips of peel for added color. Cut into slices and place in the ice water/salt solution.

Let rest for 15-20 minutes.

When ready to serve, remove ice cubes and at least half of the water. Add white vinegar, starting with about a cup and adding to taste.

Serve chilled.
