2 cans of Beets, drain but reserve juice
1 c Beet Juice (from canned beets)
1 c Vinegar
2 T Pickling Spices
1 c Sugar

Directions:
Directions:
In a pot, pour beet juice (1 cup) and bring to a boil. Add vinegar, sugar and pickling spices. Simmer for 15-20 minutes. Pack beets into a jar and pour hot liquid over them. Allow to cool, put on a lid or covering, then put into the refrigerator for at least 2 days before serving. Makes 1 Quart. Refrigerate leftovers.

To can, process in water bath in sterilized jars. Pints 3-minutes, quart 10-minutes.

Just a Note from me, Jeanie Catino- Rita Catino, my mother-in-law made these for me using Splenda or Stevia. They were amazing. For the diabetics in the family, enjoy.

NOTE: For the diabetics in the family, we have used Splenda or Stevia to replace the sugar in this recipe. JC
