1 large onion
2 cups diced celery
3 loaves of bread cubed(Texas toast or sourdough)
1/4 cup of fresh sage
2 T minced garlic
1 t salt
1/2 t black pepper
1 T celery salt
3 T butter
1 dozen eggs
4 cups milk
1 T salt
1 T pepper
1/4 cup rubbed sage (dried sage)
1 t garlic powder
1 t onion powder
2 cups chicken stock

Directions:
Directions:
Chop onion, celery, and fresh sage. Add minced garlic, a teaspoon of salt, pepper, and fresh sage to the onion and celery, then sautee in butter on medium heat until the onion and celery are soft. In a large dish, add bread and sautéed veggies. In a separate bowl, mix eggs, milk, and seasonings. (Tablespoon Salt, pepper, rubbed sage, celery salt, garlic powder, and onion powder) Then add the milk and egg mixture to the chopped bread and mix in by hand until the mixture is absorbed by the bread.
In a cast-iron or frying pan, melt approximately 2 T of butter to cook the stuffing. The stuffing will need to be browned in a cast-iron skillet in batches. Brown in butter until the stuffing has a nice golden brown on the outside. Once browned, remove from the heat and dampen with 2 cups of chicken stock. Put into an oven-safe dish and put on the Traeger or oven, covered. Cook until turkey is done, or for 1-2 hours.
