½ cup butter, softened (1 stick)
1 cup light brown sugar
3 tablespoons white sugar
1 large egg
2 teaspoons vanilla
1 ¾ cups flour
½ teaspoon baking powder
½ teaspoon baking soda
½ teaspoon salt
1-½ cups semisweet chocolate chips
1-½ teaspoons instant espresso coffee powder

Preheat oven to 300º

Place butter and sugars in bowl in mixer. Beat for 30 seconds until mixture is fluffy. Beat in egg and vanilla for 30 seconds longer until well combined.

In another bowl sift together dry ingredients and add to mixer on slow speed. Beat for about 15 seconds, stir in chips and espresso powder and mix for another 25 seconds.


On parchment paper lined cookie sheet, drop rounded 2 tablespoons of dough ab3 inches apart. Gently press down on dough with back of spoon to spread out to ab2 inch circles.

Bake about 20 minutes or until cookies are browned around the edges. Bake longer for crisper cook.
