1 frozen pie shell dented with fork
1 cup powdered sugar
½ cup peanut butter
¼ cup corn starch
2/3 cup sugar
¼ tsp salt
2 cups milk
3 egg yolks, beaten
2 tbs butter
¼ tsp vanilla

Meringue
3 egg whites at room temperature for 2 hours
6 tbs sugar
¼ tsp salt
¼ - ½ tsp vanilla

Directions:
Directions:
Preheat oven to 350º F.
Cook pie shell until lightly browned and let warm slightly
Combine powdered sugar and peanut butter, set aside.
Spread half of peanut butter/sugar mixture into bottom of warm pie shell
In a small saucepan, combine corn starch, sugar and salt.
Bring milk to a boil in a separate pan. When milk is scalded, pour over corn starch mixture and mix well.
Pour a small amount of hot milk mixture over the beaten egg yolks and stir to combine.
Pour eggs into larger milk mixture and cook in top of double boiler until mixture thickens.
Add butter and vanilla.
Pour into prepared pie shell.
Sprinkle with most of remaining peanut butter mixture, saving a small amount for meringue.
Let cool. At this point you can put pie in the refrigerator if not serving immediately.
Top with meringue. Top meringue with remaining peanut butter mixture.

Meringue - Beat egg whites with a mixer until foamy.
Add sugar a tablespoon at a time and continue to mix. Add vanilla and salt and mix completely.
