Double this for 13 x 9 pan

8 cups dry bread crumbs (buns, leftover bread, etc.)
½ stick butter
1 - 2 cups chopped onion (depends on how much you like onion)
1 cup chopped celery (chopped fine)
1 chopped green pepper
2 Tbsp. Rubbed Sage (you can add more if desired)
1 heaping tsp. salt
1 heaping tsp. sugar
Pepper to taste
2 eggs
3 cups hot chicken/turkey broth

Directions:

Saute vegetables in butter until tender. Pour vegetables over dry (cut in pieces) bread crumbs. (I lay out the bread 2-3 days ahead to sufficently dry out.) Add sage, salt, sugar, pepper. Pour half the broth and stir before adding eggs. Stir and continue adding broth until nice and “wet" but not "mushy". You want to be able to see bread pieces.
Put in greased pan and bake @ 350º for 30 45 minutes depending on size of pan and how thick it is in the pan.
