1 cup yellow cornmeal
1 cup flour
¼ cup sugar
4 tsp. baking powder
½ teaspoon salt
1 cup milk
1 egg
¼ cup shortening

Directions:
Directions:
Preheat oven to 425°. Take an 8” square pan and put shortening in the pan to coat and place in oven while it is preheating.

In a small/medium bowl mix the other dry ingredients. Stir egg and milk together and then add to dry ingredients, stir. Pour hot oil from pan into bowl and stir again. Pour into heated 8” pan and bake for 20-25 minutes until golden brown. Serve immediately with butter and syrup or molasses.
