Marshmallow Topping


Ingredients:

3/4 c water
1 tbsp gelatin powder
1 c plus 2 tbsp sugar
3/4 tsp vanilla extract

20 - 25 small cookies (thin and crispy, chocolate or chocolate chip) or graham crackers cut into 1 1/2 - 2 inch rounds

Sprinkle gelatin over water in a medium saucepan and let sit to dissolve for 3 - 4 minutes.
Stir in vanilla and sugar.
Heat through, while stirring continuously, until all the sugar has dissolved (another 3 to 5 minutes).
Pour mixture into mixing bowl and let cool to room temperature.
Blend on high speed until the marshmallow mixture forms medium - stiff peaks.
Pipe dollops of marshmallow topping onto rounds of thin cookies or graham crackers.
Place the cookies with topping in the freezer for at least 15 minutes before dipping in chocolate.
 

Chocolate Topping

1/2 c milk chocolate chips
1/4 c semi-sweet chocolate chips
2 1/2 tsp coconut oil

Melt chocolate chips and oil together.
Stir until completely smooth.
Dip the top 2/3 - 3/4 of each marshmallow in the chocolate and set back on a sheet of parchment paper for the rest to drip down the sides of the cookie.
Cookies can be stored the fridge until ready to serve.

Miles and I (Lisa) have been watching "How Its Made" before he falls asleep at night. He saw an episode that was for marshmallow filled cookies and was excited to try making them! I love that he is interested in baking with me and trying new things! For me, that is quickly worth a huge mess in the kitchen.
