2 lbs ground beef
1 pkg McCormick Chili seasoning
1 can Hunts diced tomatoes
1pkg shredded cheddar cheese
1 pkg shredded Monterey Jack cheese
1 cup onion chopped
Salt, pepper, garlic salt- to taste
10-12 corn tortillas
Oil

Directions:
Directions:
Brown ground beef in large skillet on medium heat. Drain fat.
Stir in onions, salt, pepper, and garlic salt
Stir in chili seasoning and can of diced tomatoes.
Reduce heat, simmer 10 min., stirring occasionally.
In a pan heat oil and fry tortillas on both sides until soft. (Set tortillas on paper towels to drain)
In a 13x9 pan set tortillas down one at a time filling with meat sauce and cheese before rolling. Top rolled enchiladas with leftover meat sauce and cheese.
Bake @ 350º until cheese melts.
