1 (15.25-oz) box cake mix
1/2 scant cup vegetable oil or 7 tbsp melted butter
2 large eggs
mix-ins as desired

Preheat oven to 350 degrees F. Line a baking sheet with a silicone mat or parchment paper and set aside.

In a large bowl, stir the cake mix, oil, and eggs until combined. Stir in mix-in as desired. Refrigerate dough 15-20 minutes.

Using a medium scoop or spoon, scoop the dough onto the baking sheet. Top with additional toppings if desired. Bake 9-11 minutes or until cookies are set. They should not brown.

Cool a couple of minutes on the baking sheet then transfer to a cooling rack. Store in a covered container up to 3 days.

To dip in chocolate: Once cookies have cooled, melt chocolate and dip half the cookie into it. Place on wax paper and add sprinkles if desired.

Variations: You can use pretty much any flavor of cake mix with your favorite mix-ins or dip in chocolate.

Red velvet with white chocolate chips: Red velvet cake mix with 1 cup of white chocolate chips.
M&M: White or yellow cake mix with 1 cup M&Ms.
Chocolate cake mix with 1 cup peanut butter chips.
