2 tbsp yeast
1 cup warm water
1 tbsp sugar
2 cups milk
1/2 tbsp salt
1/2 cup sugar
1/4 butter or oil
7 cups flour
2 eggs, well beaten
1tbsp butter

Directions:
Directions:
Mix yeast, water, & 1 tbsp sugar and set aside. Heat milk, salt, 1/2 c sugar & 1/4 c butter in pan to lukewarm. Pour heated mix with 4 cups and beat with a mixer. Add eggs and beat again. Add yeast mixture and beat again. Slowly add remaining flour and mix until you can no longer beat with beaters and start to mix by hand. Fold over with the palms of your hands until smooth. You cannot overmix. Cover with warm, wet cloth and let rise until double in bulk. Punch down and let rise again. Melt remaining butter. Roll dough on floured board to about 1/2 inch thick & cut with a round cookie cutter. With a butter knife, put an indentation in each round, without cutting through the dough. Next pick up a round and touch the indented side to the buttered cookie sheet, fold at the indentation, and squeeze edges together. Dip both sides of the roll in the butter before placing in the pan. Fill the cookie sheet. Let rise again. Bake 350º for 15 minutes.

Note: You may need more flour. Dough will not be as stiff as bread dough or real sticky either. The recipe is 2 cookie sheets with 3 rows of 8-9 rolls per sheet. I often have enough left over to make a couple in a pie pan. This is a great sampling when they come from the oven.
