4 tbsp butter
1/2 c flour
6 c milk
1 bag frozen broccoli
2 tbsp minced onion
2 cans chicken broth
Salt and pepper to taste

Directions:
In medium saucepan melt butter over low heat, stir in flour to form paste. Gradually whisk in milk. Increase heat to medium, and stir continually until it begins to bubble and has a nice smooth white sauce. Remove from heat and set aside. In large pot combine broth, broccoli and minced onion. Bring to boil, reduce heat and simmer until broccoli is tender. Add white sauce to broccoli, bring to simmer, but do not boil. Season with salt and pepper. Red pepper flakes may also be used or for a different taste, sprinkle with nutmeg. Grated cheese may be used as garnish, or may be added to the white sauce to give you cheesy broccoli soup.
