2 shredded apples (about 1 cup)
1 ¼ c. flour
¾ c. sugar
1 tsp. baking powder
1 tsp. salt
½ tsp. baking soda
½ tsp. cinnamon
½ tsp. nutmeg
1 c. dried cranberries
2 eggs
½ c. oil
½ c. sour cream
1 tsp. vanilla

Mini loaf pans (6 x 3 in.)

Shred 2 apples and squeeze them dry. Whisk together the flour, salt, baking soda, cinnamon, and nutmeg in a large bowl. Add dried cranberries. Whisk 2 eggs, oil, vanilla, and sour cream together in another bowl. Stir in shredded apples. Fold wet ingredients into the dry ingredients until it is combined. Then divide the batter into 3 buttered loaf pans. Bake at 350º until a toothpick inserted into the center comes out clean (approximately 30-40 minutes)

Let loaves cool on a metal rack.

These little loaves were another big seller at the Pilgrim Festival for Grandma. She would buy festive tins to bake them in and wrap them up in colorful cellophane. They are great gifts for giving during the holidays!
