1 ¾ cups sugar
4 T. yellow cornmeal
2 T. flour
5 large eggs, lightly beaten
2/3-cup buttermilk
½ cup butter, melted
1 unbaked piecrust, any type (9” pan)

Combine sugar, flour and meal in a large bowl. Add eggs and buttermilk, stirring until blended. Stir in butter and vanilla and pour into unbaked piecrust. Bake at 350 degrees for about 45 minutes or until set. Cool on a wire rack.

This basic pie can be changed to many different flavors. These are some possible add-ins:

- 1 can of coconut and 1 can of drained pineapple
- 2 squares of unsweetened chocolate or 4 T. unsweetened cocoa
- 1 cup of raisins or other dried fruit
- 1 cup sautéed finely diced fresh apples, well-drained, with a sprinkle of cinnamon
- 3 T. fresh lemon juice. Reduce buttermilk by 3 T and delete vanilla.
- Substitute almond extract for vanilla
