1 1/4 cups sugar
1 cup salted butter
2 large eggs
1 tsp baking soda
1 tsp baking powder
1/2 tsp. salt
1 tsp cinnamon
1/4 tsp cardamom
1/2 tsp nutmeg
1 tsp vanilla extract
2 Tbsp. coffee
1/2 cup molasses
1/2 cup Karo syrup
4 cups quick cooking oats
3 1/2 cups all purpose flour
1 cup milk chocolate chips

Directions:
Directions:
Place sugar and softened butter in bowl of mixer and mix until creamy. Mix in eggs and beat until well incorporated and mixture is light and fluffy. Sprinkle in baking soda, baking powder, and salt. Mix in until well incorporated. Add cinnamon, cardamom, nutmeg, vanilla, and coffee. Mix well. Mix the molasses and light Karo syrup. Beat until everything is combined. Add the oats. Mix thoroughly. Add flour in half-cup increments, mixing after each addition. Scrape down bowl. Mix in chips by hand. Spray cookie sheets with non cooking spray or use parchment paper. Drop cookies by heaping spoonfulls, no more than 9 cookies per sheet. Think double sized cookies...(2 Tbsp scoop) Bake your cookies at 350 degrees for 15 to 18 minutes or until springy on top when touched lightly with a fingertip. Let cookies sit on sheets for 2 minutes after removing from oven and then remove them from sheets onto cooling rack.
